This is not a true salad recipe.
Salads have leafy greens. If you read the list of ingredients for a salad, the number one ingredient would be lettuce, romaine, kale, spinach…this salad has no leafy greens.
Ok, if you follow my narrow sense of what a salad is than potato salad is also not a salad. And I’m ok with that.
What broccoli crunch salad is, is delicious.
Don’t let the word ‘salad’ dissuade you from making this side dish.
Yes, it’s meant to be a side dish. Why? Because you won’t feel very satisfied for long if all you have is a big bowl of broccoli crunch salad for your meal.
There is a small amount of cooking involved in the creation of this dish. Mainly, frying up the bacon.
Oh, yeah, did I mention this salad has BACON?
Don’t get bacon that has added sugar (like honey barbeque or maple…) or flavors. A nice, simple smoked bacon will work best.
- 3 1/2 cups of broccoli (just the florets)
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1/2 cup dried cranberries
- 1/4 cup sliced almonds
- 4 strips of bacon
Cook the bacon however you like bacon best. Fry it, bake it, whatever. Eventually it will be in the salad and marinating with the dressing, so any amount of crispiness it has will get muted somewhat. Then chop it up into teeny, tiny pieces.
Mix the vinegar and mayonnaise together.
Now toss everything into a bowl and mix.
You just made broccoli crunch salad. Well done, my friends.
